Winemaker’s Tasting Notes: Stainless steel fermented. 100% French oak aged sur lees; 20% new oak with the rest of the cooperage neutral. Bottled unfined, unfiltered. Golden straw in color. Big nose full of orange blossom, citrus rind, grapefruit, pear, and key lime. Secondary floral aromas of gardenia and honeysuckle with savory hints of thyme and lemon basil. Ripe, medium-bodied flavors of pear, quince, and pomelo followed by secondary hints of licorice, key lime, nutmeg, and toast. This wine offers a nice tug of war between fruit and natural acidity on a very long finish.
