Lively in appearance, yet showing good concentration of colour, the 2010 Faithful Hound overflows with classic Claret aromas of ripe cassis, fragrant purple plums and spicy notes of sandalwood, star anise and white pepper. The full bodied, generous palate mirrors the juicy fruit aromas found on the nose. Flavours of dark chocolate and sweet cherry tobacco are restrained by a mineral chalky texture which tapers into a fine and lasting finish.

The grapes were handpicked and crushed into stainless steel fermenters where the must was cold soaked overnight and allowed to begin fermentation spontaneously. The grapes where then inoculated. The wine fermented dry on the skins, was pressed and underwent malolactic fermentation in tank before being blended and racked to barrel for maturation. A light fining and filtration was applied just before bottling.
Food Pairing Notes
